Simple Recipe:
Pre-bake a pie crust
Mix together: 1/3c self rising flour, 2/3c sugar, 2c whole milk
Stir until all lumps are gone
Cook over medium high heat until mixture bubbles for two minutes
Remove from heat, stir small amount of hot mixture into three slightly beaten egg yolks, return to main mixture
Bring back to bubbling for 1 minute STIR CONSTANTLY
Remove from heat
Put 1tablespoon of butter into mixture and stir until melted
Put coconut flakes into mixture (as much as you want)
Place in cooled pie crust
Beat 3 egg whites into meringue (use your favorite recipe for meringue)
Top pie and add some coconut flakes on top of meringue
Bake until lightly browned
Eat! Enjoy!
